Winter Meats Order Form

Tired of standing in the COLD BARN in winter to get your great meat products? WE are! To better serve you, we will be making regular meat order deliveries to Tait Farm through March. Dates will co-incide with the Tait Farm CSA pick-ups from 2-5 PM.

If you cannot make it in that time slot your orders will still be there, waiting for you when you can come. Ask at the Harvest Shop.

These order /pick-up dates are:

Three ways to order (be sure to put your name and email on the form!!)

1) Look at the order form and just email us what you want

2) Fill out the order form and email it to us

3) Fill out the order form in hard copy and leave at the Tait Farm Harvest Shop

The Notes section is for special requests (ie. cuts not on the list) and if we have them, we will let you now.

We will send out reminders each week there are pickups. If you are not on our "meat alert list", please ask to get on!

Spring, summer and fall we have lots going on at the farm and welcome helping hands. Daily tasks include taking care of animals (chickens, pigs, hens, turkeys, cattle) and plants (windbreak trees, gardens, fruit trees, borders) and all the fences, buildings, watering systems and machinery. Then there is MARKETING! Consequently, we are happy to host farm interns for the summer - preferably from about April through November. We offer room and board, and, after a suitable trial period, a small stipend for the right person(s) who want to take on more responsibility. After reading about our farm, If you are interested in working with us, contact us and we can discuss the possibilities.

The Value of Diversity

A diversified small farm such as ours seeks to "stack" enterprises - that is, have complimentary processes and products that fit into a holistic undertaking. Each of our "enterprises" fills a niche, both economic, ecological and temporal. Each enterprise must fit our management capabilities and schedule as well as contribute to a cash flow "gap" or provide a buffer in case of the expected "unexpected" events. So, for example, some of our grass generated income during the summer as the boarded heifers graze and we are paid monthly. During the winter the excess grass that was harvested as hay, provides income in January, February and March. The chickens are a relatively low-risk, high turnaround enterprise, since they are ready to butcher and sell after 8 weeks. Whereas turkeys take 4 months and the pigs take about 6 months. Beef is much riskier, high investment type of enterprise - one that we are now "out-sourcing". You can read more about each of these topics in the tabs of the same name.

Pigs

Our pigs spend the summer out under the shade of locust trees and a moveable "pig pen". After eating down the spring oats or rye cover crop, the pigs get a mixture of organic grains, hay, whey, weeds harvested for them and excess garden fruits and veggies. We do not currently have the pigs out on pasture due to their "rooting" habit of tearing up sod and also their need for a "wallows" to keep cool. In the locust grove, we let them build big wallow craters to plop down in in the hot summer and they can also get out of the wind and rain in their bedded shelter. Ultimately, they are butchered locally and provide a diverse selection of excellent cuts including no-nitrate hams an bacons, smoked chorizo and andouille, chops, roasts and other delectable tidbits.

With recent events in the world, including the "quality" of industrial meats and other foods and food security issues, the importance of building local food networks has never been greater. We recognize that it takes extra time and effort to find, buy and store locally-produced, seasonally available food.

However, that very act, besides providing you with the best, healthiest food on the planet, is assuring the survival of small farms and a thriving farm economy in your own neighborhood. (In the US today, the average bite of food has to travel 1,500 miles to get to your plate.) In addition, your food dollar is going almost 100% to support the local farm economy.

Our daily farm operation pays the organic farmer that grows the grains we use, the suppliers of chicks, local store-keepers, hardware stores, farm supply and repair shops, our processor, our neighbors who sell us straw and hay - all local, small farmers and businesses. It's this simple: your vote with your dollar helps us all to keep a viable local economy!

Farmers and eaters need each other to stay healthy!

Pastured Poultry

From April through October we raise several batches of 1-200 Cornish Cross broilers in moveable field houses out in the pastures. The houses allow birds free access inside or out, depending on the weather and their individual preferences. Houses are on skids and so can be moved to cleaner, greener pastures throughout the season. Birds are fed organic grains which they supplement with grass, clover, insects and various found objects. About once a month, birds a butchered and sold fresh the same day to our customers in the State College, PA area. We encourage those interested in fresh chickens to order ahead of time for the whole season if possible. See our Fresh Poultry Order Form.

Two breeds of turkeys are raised from June or July through November in much the same way as the chickens. Broad-breasted white (normal size) and bronzes (huge) are available fresh the Tuesday before Thanksgiving by pre-order. See our Fresh Poultry Order Form.
